The apple didn't change him. So from Dalamud I gave him a pear and he changed to Blood red.
Might just give him a lemon and start over for the second time. Maybe then it will be easier to get Rolanberry.

Starting Colour: Blood Red
139R 52G 34B
Desired Colour: Rolanberry Red
84R 19G 35B
Before you feed him the lemon and start over try this "Darkener" combo:
x9 Berries
x5 Pear
x3 Apple
This combo should result in an RGB of around 84R 17G 39B (assuming +/-5 average integer and using the original RGB spreadsheet) and should push you into Rolanberry Red range. Remember your mileage may vary. For Science!

I am not sure why you'd give him a pineapple. But from Dalamud to Rolanberry you need to feed it Berries.
If you're at Blood Red, I'd try giving it 1 feather proc of red and 2 feather procs of blue.
I am currently at Dalamud and chose to stay there. But many people have posted results of going from Dalamud to Rolanberry with only 1 Berry.
Finally got my Morbol Green after zig zagging through the blues.
My entire journey (derps and all) was:
Desert Yellow
Seafog Blue
Turquoise
Seafog Blue
Turquoise
Peacock Blue
Hunter Green
Morbol Green
My previous color was Hunter Green (34, 68, 38). Since my target was Morbol Green (26, 63, 63) I fed it the following using the +/-5 rule.
Berry x3.
Apple/Pear/Berry (alternating) x2.
I received a feather proc on every single fruit.
That took the Hunter Green (34, 68, 38) to 29, 63, 63 which was super close to the listed values of Morbol Green.

hello !
after 3 days of experimenting (with, i admit, little knowledge about that whole stuff) i got my chocobo from desert yellow to celeste green and then from celeste green to sky blue. i'm actually trying to find turquoise green, and it seems like i don't have any chance of reaching that color from sky blue ... anyone has any advice ? is there a way to make it turquoise from that color or should i just feed him a lemon and try again ? :/
You could feed it a ton of Apples/Pears/Berries in equal quantities to deepen the colors. Celeste Green transitions down to Turquoise almost perfectly. It might take a bunch of fruit though.hello !

Alternatively you could try to repeat how I found Turquoise. From default I fed it 18 Berry procs and 11 Pear procs. I'm sure you could get to Turquoise in less but that's what my initial feeding attempt resulted in.
Good luck!
Did this and got Dalamud red. So, one berry proc?I am not sure why you'd give him a pineapple. But from Dalamud to Rolanberry you need to feed it Berries.
