Example: You go in, and one time it has the type of arena AoEs that Isgebinge has. So you learn it can do that. Next time, it has Petrifaction, but no Isgebinge-type AoEs. Players have to adapt, but in this way they know how to handle each mechanic - just not which mechanic will be thrown at them at any given time.

Players will discuss things like, "Well, if it has Petrifaction AND the ground AoEs, how can we adjust to this? What if it has bomb-type minions that blow on contact? We'll need a BRD to bind them, maybe Tri-Disaster! Or, a tank can provoke it and hallowed ground, disregarding the AoEs while everyone dodges?"
Things like that.

Then, the group goes in, and practices their decided strategy. It would take very reactive teamwork.
Hopefully that is a little more put together and understandable.
