It really depends on the type of fight. I jumped into Garuda EX, Levi EX, Ramuh EX, and T6 all completely blind, but I've studied up on the rest of the fights (for example, I would never jump into Titan EX blind).
Dungeons aren't really hard enough to justify watching a guide on, and even if everyone in the party is new it usually only costs at most one or two wipes to clear the entire thing.
As long as you pay attention and learn quickly, you should be able to catch the mechanics in a few tries.
I love learning new fightsI'm always keen to play on patch day so that not having a clue is the norm and people don't try to explain the fights of ST/CT/new dungeons to me. But, I'm the same as a few people above in not wanting to do Coil/EX Primals without having a look at them first. I don't find it ruins Coil at all since watching the mechanics and actually dealing with them are two very different things for me :P
i pretty much despise reading/watching guides
my ADD kicks into hyperdrive when someone can't just simplify an entire fight explanation for me. I hate things that are needlessly complicated or are not succinct/concise.
I go in without studying beforehand even if the content has been out for a while... but I pretty much only do new content with my friends because I don't want to get in the way for people I don't know.
At most, someone may give me very general advice about boss fights -- like "make sure to kill the adds quickly" but that's about all.
After doing it a few times I might start to read guides, but that's only so I will be more proficient at it before trying it in DF.
No guide in the world has the power to help those with tunnel vision and a slow brain.
I like goin in not knowing what to expect. So I always use the duty finder, and I never join parties through PF if I don't know the fight.
A lot of times ppl are gonna leave (the tank is gonna leave...) when I tell them im new but I don't care. If they wanted an experienced group they got PF.
Currently working on getting Moggle Ex down through DF and on my first try we actually got to the last phase, but I've only got to it one time.
But it doesn't matter I like having a goal and even if we wipe I'm gonna keep trying til I get there!

I usually like some <Protect>ion when going in raw.
On a more serious note, I prefer to have some idea of what I'm getting into so that there is less of a chance that I'll be the cause of a wipe. I don't enjoy dying several times trying to complete content. I do content to actually complete it, and dying repeatedly is not fun to me.
Edit: Specifically this refers to things like Primal Fights and Coil.
I don't mind going into normal dungeons blind, they're just dungeons and as such typically aren't that hard to begin with.

Virgin dungeons are a joy to enter... Just charge in and see what happens.
One battle in particular I went into with completely no knowledge was Ultima HM. It was so much fun to learn and easy to pickup what to do on various phases. Other more complex fights I have researched before even stepping in (Second Coil)
