Yes, you just get items and hit desynth. You can buy basic gear from NPCs to start. What exactly you desynth is up to you. Higher level items will have a lower success rate until you level up some more but offer a lot more XP, so it's your choice for constant but slower XP or gamble for high value xp gains.

You can "undo" desynth levels just by leveling something else. There is a method to lock your levels that is posted on these forums as well as the devs adding a way to lock your level in the future, but desynth classes you aren't using will have a chance to go down in level whenever you desynth on something else.

As far as I know all that having more levels does is increase your chances to successfully desynth higher level items.
