Is there a chart that explains all of the possible symbols that can appear next to mob names? I've tried searching for one, but I must not be using the right key words.

Gamerescape has a pretty good list. The only ones that are missing (AFAIK) are the little gear icons you get over Hunt targets/Animus book targets.

Something like this?
You guys are fabulous. That's exactly what I was looking for. Thanks!
Little off-topic.
Always wondering when I see the icon of gladiator, why in world it has 2 blades instead of blade and shield. It's like picture of class which is dual blade (like bladedancer or something)![]()
Who knows? Why is the Marauder symbol two crossed axes when they only use one? Just two of Life's may mysteries.![]()
Lots of mysteries in this game! The best one for me is why are staffs labelled as two handers but my WHM uses one hand to wield them.
OK, here's one my son asked me yesterday and I had no answer for him: What do the letters in blocks (for example a K in a block) mean to the right of mob names?
They're just there to identify individual mobs. So you could, for example, tell your group to attack Superfluous Insect G, then Superfluous Insect H, then Inexplicable Canine I.
In practice, nobody really uses them.
