I've been targeting the mob and pressing a basic attack to enter combat. It works, but there is definitely a bit of a delay that makes me wonder momentarily if I'm going to attack. Only the mobs name/bar turning red, and the mob going into its aggressive/defensive animation really lets me know I'm actually fighting.

I have no doubt this is one of the things Yoshi refers to when he mentions making on-going adjustments and tweaks to the combat system. It does definitely feel "weird" at the moment.

Perhaps just putting Ctrl+A in like in XI, or being able to assign some other hot key would be a good way to sorta do everything at once when you have a mob targeted.

    Could go something like this:

    1 - Select Mob
    2 - Press Ctrl+A (or other hotkey)
3 - Character automatically goes into active mode and beings auto-attacking, with very low delay before first attack (for the sake of response/feedback time).
4 - When mob is dead you can either go into passive, or switch targets, just as it is now.

    Seems straight-forward enough to me.

Obviously it would be different for a gamepad, but hopefully just as straight-forward.

I would suggest a button for the action bar, but that would eat up one slot that could be better used for something else.
