Correct, once you reach the level cap you improve your character by collecting gear with higher item levels as opposed to gaining experience.

I didn't play too much of MNK in 11 so I can't really comment on it, but MNK in 14 revolves around doing heavy, constant damage quickly by maintaining combos and keeping self-buffs and enemy debuffs/DoTs active. It's quite active and you have to move around a lot to optimize your damage. Your main mechanic is Greased Lightning which you get from completing a 3-step combo (I'm sure you have access to this at your level). As you level up you can get more stacks of Greased Lightning by maintaining a combo which increases your attack and attack/skill speed even further.

Your other major mechanic is the 3 stances, with some skills only getting specific effects when in a certain step of your combo and others being outright unusable unless you are in the correct stance. As an example, Arm of the Destroyer is a skill that can Silence an enemy but only if you are in a specific stance. There is a boss in the Binding Coil of Bahamut that has an annoying skill that must be Silenced to interrupt it and it follows a set pattern. A MNK can keep that skill locked down indefinitely by paying attention to the pattern and timing their combo so that they will be on the correct stance whenever that skill is cast.
