The cap is stupid. I want to be able to do everything.
But you can do everything. The points are plastic to whatever class you want to desyth on.
Now, were talking about theories vs. what can actually be done. The points pool is separate from the crafting exp and level pool.
EDIT:
The same can could be said about such an exaggerated statement, when you can do everything. It's not like the points are static, and once you make a decision, that's it. You've been given flexibility with this.
With that said, I'm not against having the ability to cap everything at 100 (which I understand as your meaning); I just don't think it's necessary, which you or anyone is welcome to disagree with.

I have only started to dabble in desynthesys. I assume that people want to be able to desynth cloth, leather, metal items, ergo the need for more than 1 at max level. However, desynthesys is only good for going after the elusive Master Demimateria and some lesser grades for crafting some items.
So, I have to ask, if the demimateria is the only thing one is going for, why not just level 1 job to 100, get the Master Demimateria required to get the tools and be done with it? There may be something I am missing, so please enlighten me.
I have no prayer for that...

You're correct that basic clear, field and battle demis could be obtained from any class (except CUL which produce only clear ones) and having only one or two maxed or at least leveled to high 90 will give you access to new recipies and tools however the main point of specific classes are unique items received from high level desynths like swimsuits from CUL and so on ...
