I've read this guide and some other bits around on the Internet--though some of what was said flew right over my head--and I understand that I should level Desynth on three DoH classes only. I've narrowed it down to GSM and LTW based on my playstyle and the DoW class I intend to play most (BRD), but I'm not really sure what the best choice for a third Desynth class should be.
As for my playstyle, I'm a solo player and not a raider. My "endgame" will probably be crafting and collecting things like minions, mounts, achievements, glamour, etc. I'll also want enough decent gear at 60 to make HW overworld content a bit easier and also to run older instanced content, possibly solo or with a friend, to obtain items for glamour.
Am I on the right track with GSM and LTW? Can someone suggest a good third choice?

It almost does not matter what you pick as a third Desynth. While you cannot Desynth everything, between the two you have you have access to almost all of the items that you can get via Desynthesis, with the notable exceptions of many of the ARR Relic Zodiac stuff, and many of the items you can get from CUL Desynth.
If you are a fisher, as well, I'd suggest CUL, just because of the variety of items you can get from Desynthing fish. Otherwise, just pick whatever you want. There is no real inherent advantage or disadvantage to having any of the others as your third Desynth.

I have leveled fishing, but only so that I can get the fish I need for CUL. I've looked at CUL for desyn, but honestly I'm not that interested in anything I'd get from it. Not sure I'd need to worry about the ARR Zodiac stuff either, considering we're into HW now. I'll have a look at all the others again now, and maybe just flip a coin in the end.

If you have Fisher at either 3 star 50 or are around 53~55, you can fish for Takitaro in Urth's Gift with Streamers or mooch for Megalodons at The Ship Graveyard with Rat Tails. Use these to get your Cul Desynth up to 90~95ish, then pick up a couple stacks of Icepicks (takes about 5 hours of fishing for 3 stacks) at the Unfrozen Pond in Coerthas Western Highlands. Eat your Tinker's Bacon HQ and brace your anus, because you have 10 minutes to desynth as many fish as you can. After you desynth about 10~15 successfully, it gets easier, and you'll be up to 140 in no time.
If you don't have Fisher at 3*/53~55, throw money at the MB for Takitaro/other 2 star fish until 90, then Tinker's Bacon HQ stacks of Icepicks. That's the only "cost effective" (not really cost effective at all, depending on your server economy) way I can think of.

Hmm maybe they readjusted the takitaro? I can't prove or disprove this since I'm well beyond the 70's but if what you're saying is true that would suggest that they did something to the desynth levels for it.
Takitaro is still listed as an r70 fish, are you sure that's what gave you 0.01 at 76 dSkill? It should give ~0.30. An r55 fish would give you ~0.01, like Giant Catfish or Mahi Mahi. In addition to Takitaro, try Megalodons from the MB - they're also r70 and also obtained often from minion-seeking FSH ventures. There's also Aetherlouse and Worm of Nym - I don't know how much they're up for on your server, but they're easily obtainable by minion-seeking FSH ventures, and only useful for Zodiac, which most people either have or don't care about at this point.
As for which third desynth to get, well, I'd hold off right now and leave yourself flexible for when the next patch comes out with desynth content. HW doesn't have any desynth-specific content - desynth was super useful at launch for obtaining materials, but the materials markets are getting saturated by actual gatherers and prices are plummeting on my server. It's no longer profitable on Faerie to desynth just for the mats, though it's not much more expensive than making them, so it's still good for getting mats while leveling desynth. Just, instead of making a profit while you level, you break almost-even. Soon, it'll be at a loss to level, but the guide's recommendations should still work just fine. Just don't expect to make money where I say you might.
When the next patch comes out with desynth-related content, it may be locked to one or two classes like Mastercraft Demimateria was locked to GSM at first, then later BSM/ARM/GSM and FC3s are basically locked to LTW right now. So, SE may suddenly make it so everyone needs a specific other class, like, say, CRP or something, and if you have your third slot free, you can blitz it. Leveling two should take enough resources for now anyway.
