What i would suggest is make the character with the name you know you want and play it to get a feel for the lighting on the skin tone. This frees you to progress. Meanwhile you can save the template and make an additional char one a less populated server to do tests around town, as the lighting in game is much different then that in the creator. Once you are happy with the way your demo looks just fantasia with the vet reward one.
For the record I think 2 looks better for what you are going for.
The decision is about what you like, not what the rest of us like. Personally, I'd probably go for the first one, as I like the slightly warmer tone, but then I tend to pick deeper colors in the hair as well, and Nane-chan has a point about the paler skin complementing the light colored hair. They both look good.
There are a couple options if you decide later you want to change anything in your appearance:
1) At level 15, there's a quest called "Beauty is Only Scalp Deep" that unlocks the aesthetician. This allows you to change several (though not all) aspects of your character's appearance. It's free the first time you use it and available for 1000 gil thereafter. (Early in the game, that's a lot of gil, but as you progress further, and gil starts to roll in faster, it soon looks quite reasonably-priced.) I know hairstyle and color can be changed. I believe skin tone is another of the features that can be changed. Can anyone confirm that part? If not, I'll check this evening when I get home.
2) There's a potion called Fantasia that allows you to re-do all of the appearance options on your character (even race and gender if you want, but not your name). You'll receive one the first time you extend your subscription beyond the initial trial month you get with purchase of the game. The only way to get more than that one is to pay real money for them through the MogStation.
