I'm not quite sure what your asking here? The only stat that truly has a cap would be accuracy and this value varies depending on the content you are attempting. Currently in order to be at accuracy cap for T9 you need 515 accuracy. As for parry, most good tanks are shying away from stacking parry as the returns are too low.

there is no Hard Cap for any stat, on your character.
however, there a main stat( STR, INT, etc. ) cap on equipment base on its iLV.

the stacking main stat will beat stacking 2ndary stat every time (except in PvP)

I may be wrong but I think the OP is asking for a priority list of stats she/he should "Cap" first? So basically, what his/her stat priorities are?

I think is what was answered, acc is 515, besides that not sure what is a good number for parry, right now im at 560ish but from 1 thread they said that stack parry while you're still progressing, then change to str/det/crit, till you're confortable holding agro and not dieing

stacking Parry or CRIT/DET is personal preference. I have been stacking CRIT/DET all the way from learning T6-T9 as PLD [MT] and never have any issued. I had 495 parry on my first T9 kill as MT and was doing fine

Not entirely true for tanks. There is a point where we have too much VIT that probably never gets used (ex. WAR in 10k hp / PLD in 8k hp). In this event, STR starts showing better returns rather than VIT.

That's true for some content but the hardest content in the game requires full main stat for tanking until there is suitable gear to lessen the beneficial effects of a large hp pool.

There aren't caps per se on any stat, we are just limited based on equipment available (the equipment itself does have stat caps based on item level). Most important stat for tanks is hitting the accuracy cap with the best gear you have available. The main job of tanks is holding the hate, and if you are missing it will affect your hate generation. Beyond that, focus on Parry and Determination, then Crit/Skill Speed if Det or Parry is not available.

    Accuracy req'd as follows:

Lv50 Dungeons, Hard mode primals, Garuda/Titan/Ifrit Extreme
    Minimum ~430 accuracy

    Coil turns 1-4
    ~476 accuracy

    Coil turn 5, Levi/Mog/Ramuh Extreme
    ~486 accuracy

    Second Coil turns 1-2
    ~495 accuracy

    Second Coil turns 3-4
    ~515 accuracy

I think that's right anyway, someone will correct if not I'm sure.

Many parties are clearing SCoB with STR spec tanks though, so "requires" is an excessively strong word to use in this situation. Maybe "recommended"?
