Why would you ever use a server OS to play games?
Work all day (client-server software development), play all night, same machine. All work and no play makes jack a dull boy.
A good development machine has a strong processor and RAM, throw in a good video card and you have a good video game machine too. The server versions of Windows tend to have everything the consumer versions do (just turned off by default), so turn it on and there is no reason you can't work and play on the same machine.
