Seems to have been a while since someone has posted here. Here is a list of fish to desynth and yes, with the big fish, you can get IV materia, excluding elemental. I suggest using Tinker's Calm after you've gotten a nice batch of 'greens.'

On the topic of CUL desynth, note that the Better Crowned Pies are desynthable and the best way to get from 95 to 110. Since the highest ilvl of a fish (including the Nepto Dragon) is only 80, getting from 105 to 110 on just fish would be a nightmare. At 105 skill, you only have a 75% chance of getting 0.01 skill from a max level fish, and at 109, the chance is ~10% for getting 0.01 skill.

You're right; I'd desynthed a variety of low level fish yesterday and not got one at all, must've just been a really unlucky combination of fish or something. Desynthed a different iLv22 fish today and did get a water shard.

I believe i90+ fish would yield crystals, as other i90+ items yield crystals for other classes. However, there are no fish above i80 as of patch 2.5 (not even the legendary Nepto Dragon).
