Probably same gear as you, except slightly better melded. I have 347 without food.
At 339, you should be able to eat food and get above 350. I just have an HQ fisher's set, moderately well melded, and my forager's rod. I think I have an extra +5 gathering from using higher level accessories that have +4/+4 melding available rather than +3/+3 that people normally use because they share gear between fisher/miner/botanist. I don't use the +3/+3 gear that has +GP on it because... I'm a fisher, not a miner. We have no need for +GP.
Now, the big question! What do you get from desynthing Olgoi-Khorkhoi?

From what I hear of people desynthing 2 star, green fish... basically trash. It seems the best stuff you can get from desynthing fish are clear demimateria, which are just high valued vendor trash, and various kinds of sand and pigments. No sign of getting the Fieldcraft Demimateria IIIs that we need for the new rod.
Someone claimed that desynthing a Silver Sovereign gave them the new blue swimsuit. Could have been a troll making things up, but it was said in one of the fish desynth threads.

Hasn't the majority of fishing been kind of a disappointment? GP stat on gear with no use for GP, no tacklebox, fish basically being trash in many aspects. I love fishing though and will continue to do it, but it seems like they could do way more quality of life aspects.

only two changes since my post
1. new rod is out
2. the new dodore belt is better than raptorskin survivor belt for fisher
dodore survival belt HQ base is +16p, add +4g and +3p will make it 19p and 4g capped
raptorskin survival belt HQ base is +14p, add +3g and +2p only which is 16p and 3g capped

I actually enjoyed big fishing for the achievements and I always found it kinda relaxing after frustrating ex primal runs.Hasn't the majority of fishing been kind of a disappointment? I figured if they're adding something to fishing it would be nice...well in general I am pretty much disappointed with desynthesis to begin with but I guess now maybe it's an alternative to just selling the fish to NPCs for a small amount of gil?
