I have been playing since Beta and I have noticed from the beginning of ARR that I'm the only one that seems to mount up to get to nodes faster. Is there a reason for this?

Bots? Probably bots.
Most of the time nodes are close enough that mounting might save you 5 seconds or so when sprint isn't up and waste a second or two when it is up. I personally never mount up when gathering. It feels....off, I guess. Maybe because I don't keep a mount on any of my cross hotbars anymore.
OK, just making sure there wasn't a mechanic I was missing somewhere.
Same as you I like to mount between nodes because at least it changes from running

The only place where I have used mounts so far are the lvl.50 ones in raincatcher gully.
And sometimes I don't even sprint at all. When I'm gathering for a longer time I'm usually in relax mode, I can live with the extra few seconds it takes.
If I'm in a hurry I'll sprint/mount up... but other than that not really. The nodes tend to be close enough.

most crystal gathering nodes are a mount friendly place also as mentioned raincatcher gully. but in my experience most are close enough its not a big difference. but I do mount up and gree don't see to many people doing it. not all bots either.
