5 hour queue? What did you put yourself down for?
If we want more people to play as tanks and healers, maybe we should be more polite to tanks and healers, especially when things go south, and even when it is their fault. Just be constructive.
I'm on your server, do my daily roulette runs every weekday, some as healer and some as dps. My dps wait times are about 5 minutes longer than my sch wait time, which means they are about 5 min because when I run sch it pops almost instantly usually. As for crafting, I only have 2 at level 50 and have no problem selling the things I make (other than the undercutters, but everyone has that problem), you just have to know what to make. So like others have said, the 5 hour wait time is either BS, or you're doing something wrong.
BTW, I play at all different hours, so stated to avoid the "I only play when the server is less busy" argument, which wouldn't be valid anyway since you can swap servers to fix that.
One thing I should mention, she plays a ranged DPS, which from my experience have a significantly higher queue time than melee DPS.
This is what I was considering posting but wasn't sure I wanted to give out this little secret. But since you already did I'll second this. DF is designed to try and get an even split between melee and ranged dps. There are far more people playing ranged either because that's what they prefer or are scared to play melee since it takes a little more skill to pull off rotations and has a lot more dodging involved. So ranged get stuck in queue longer while the melee get in ahead of them.
On my drg I never wait more than 5 mins for a roulette. Also when CT first released I geared my BRD then BLM and queues were an hour plus for both. Geared my MNK 3rd and if it wasn't an instant queue it would almost always be less than 5 minutes.
Yes, when I queue up on my brd or smn for, say, a trial or main story roulette the same time as a mnk fc-mate queues, his will pop as fast as a healer, while my '5-min' wait time can often be 15.
EDIT: but 5 hours, hyperbole is one thing, but over 5 hours I don't believe.

The generation of random numbers is too important to be left to chance.
If you seriously waited for 5 hours in a queue, then your queue was broken. If you had withdrawn and tried again, you would have gotten it in less than 15 minutes.
Also, the amount of DPS classes has nothing to do with long queues. DPS is, and will always be the easiest job. Not to mention that it's much harder to pinpoint a bad DPS, while noticing bad tanks/healers is way easier. That's why 90% of the players flock to it, and why there's such an imbalance in the queues.
It isn't that hard to pick out a bad or stupid dps, just that Tank and Healer mistakes generally come with far greater consequences.
Personally though, as a main DPS, I haven't sat in queue longer than 45 min since before 2.1; except for a time recently when I ran one of my mates through T3.

Monk queue times: 3-30 minutes
Dragoon queue times: 3-30 minutes
Conjurer queue times: 0-5 minutes
Tank queue times: 0-15 minutes
specific Trial, Coil, Dungeon search:
For any DPS 20-90 minutes
For Tank 13-90 minutes

You think PVE queue is bad in queues? Try PvP
Oh and in WoW wait times for classes could be insanely long as well.
