Well, at ilvl70~110 VIT is the only option.
An extra 30 attack from STR isnt going to put a dent in anything when you already have 370-400 attack. It's not going to give you the amounts of extra enmity you hope it would either. On a Lv.50 Training Dummy it will make your Fast Blade go from about 166 damage to about 180. Your Savage blade from ~211 damage to ~225. And your Rage of Halone from ~290 damage to ~314. It's 8%, sure, but 8% of crap is still crap. Paladin isnt a damage dealer. Does it help? Sure. But once something actually requires you as a PLD to need that extra 14-24 damage over increased survivability, something is terribly wrong with your party and your actual DD party members.
DEX it's Blockrate increases give you maybe a 1-2% higher blockrate/parry from 30 Dex. Nothing that would save your hide when in trouble (Lets face it, <10% blockrate for 20% damage blocked is still a measely 2% efficiency.), and you cant block magic.
While 30 VIT on the other hand gives you an extra 435 HP. Extremely helpful when you have 6000 HP, and still very helpful when you have 7000.
Just focus with PLD on what you're meant for. Taking hits for other people. And quite frankly, the only thing that helps towards that is VIT.

I'm leveling Pal just for the sake of getting it to level 50. No other reason really. I'm throwing all mine in DEX for the hell of it. Actually, I want to see if I notice a difference in parry and block rates, regardless I won't ever use my Pal in end game content. If it is your main do VIT and STR.
I did all strength plus I like to rock strength acces on pld as well.
It's a personal call one should make based on their gear and preferences. I did STR while leveling then swapped to VIT when I reached 50 back in fall. I probably will start splitting my merits as the game continues forward.
Putting on other stats other than VIT have maybe some sense when stat bonuses have multiples math as some games, in which you get 100atk for str 30, still 100atk for str 39, and 110atk when str 40.
Unless I'm wrong somewhere, all stat bonuses will move at every single point, so... 30 vit.
Eh. That's a 10k seal reset, and it isn't until you're stuck in the 30-40 level range does managing hate get bothersome because of the lack of Shield Oath. Better to put it all in Vit while you can, and just suffer through those 10 levels until you get the tools to help you better.
