Drk could use, and skill up. Club, Sword, axe, great axe. dagger in addition to scythe and greatsword.
War could pretty much use every weapon in the game, all other jobs could only use a handful.
Also, most jobs could only skill up a certain weapon or two to the point that a DRK, for example, could skill up a Scythe and a Great Sword. So I don't understand what you're trying to refute here.
Axe, Great Axe, Sword even B- rating and dagger / club c/c- respectively.
DRK couldn't skillup/properly use 3 weapons staves, polearms and h2h.

Exactly! A handful of weapons, only two of which could be wielded efficiently. The others could only be useful in extremely situational circumstances; however, they never warranted any real necessity and DRK was relegated by the playerbase to Scythes and Great Swords only (though I also always carried a ranged weapon with me too). Thereby, the ability to equip those extra weapons is made pointless. Thereby, the whole idea of "player choice" concerning weapons in FFXI was an illusion; or rather, was extremely limited.
So, unless something happened post abyssiea (when I moved on to thief, dancer, and sam) that completely changed how DRK was played, then please inform me.
Again, I don't understand what you're trying to debate here.
If you're just trying to be right about something, then I concede. This discussion is going in circles.

I wanted to be a dagger wielding warrior but parties didn't want me, because dual wield axes were better, (higher skill-cap).
No, I didn't want to be a thief. Wanted to shank people up front like a boss.
Oh... I also wanted to practice being a pseudo PLD before I unlocked it but people looked down on WAR/WHM.
Not really, Yes there was a variety of weapons a job could use. However, Each Job had an "ideal" weapon that you could take it a lot further (skill points) than other weapons. Like Samurai used Great Katana's (A+ rating) at level 99 it caps at 424 points and could use Polearms ( B- rating) capped at 388 points.
Overall, you are more than likely to use the best weapon for your Job, in this case it's Great Katana. Only certain situations liking killing birds would Polearms would be useful.

The problem with doing something like this is that is make balance a harder thing to achieve, and makes it more difficult to make high tier content that has a defined structure to it. For now, the current system works just fine, because content can be designed in a particular way.
And it went almost completely unused because different Jobs had a weapon type that they excelled in, and others that you couldn't skill up high enough to be useful. PLDs did not go around tanking with Polearms, even though they had a skill in it. They did occasionally use a staff, but that was primarily the Earth Staff which was used for the damage reduction effect, not because Stave tanking was effective.
The same applied to all other Jobs almost. The most prominent I can thing of that was actually used for a while, was Dark Knights using either a Great Sword or Scythe. But then things changed, and one became the primary and the other was laughed at.

FFXI's system was nice, but not anything that would be viable here with the current system that we have in place. Any weapon added to the jobs/classes would obviously be viable, since it would create a whole new way to play the class. It may also alleviate the lack of tank issue since there will essentially be more jobs that can do it.
If you want more specialization you'll have to wait for the expansion when they are supposed to add second jobs to each class.
Player

ya, it was announced in the live letter on youtube live if you watched it for e3. maybe not in this coming xpac but Yoshi does state they are looking in to making multiple roles to each class. although I will say im not sure if by second jobs he means roles ie tank healer dd but this was discussed and they want to add additional roles to each job.
