You will barely notice a difference, if at all. So load up on INT for your SMN, and heal on your SCH when you need to, and don't worry about it so much. Or if you're really stressing over it, put half in INT and half in MND, but seriously, the difference in your healing ability will be negligible if you put it all into INT for SMN.
    Marael is right here.

On a side note, if you really want to switch your stats: I have 9 The Keepers Hymn that is sitting on my character. (I'm all INT on my SCH/SMN combo)

OP - I would go with what you feel to like at the moment: You can always change your stats back and forth, it's easy to get these seals nowadays.

As some others, I leveled all classes, including crafters and gatherers to 50.

I am a Magic User Mainly in MMOs. and Demonologist. So Summoner was a perfect fit for me, until I realized me and my GF were waiting so long for queues to get into dungeons to 'have fun' I had to resort to Tank.

    Now my main is PLD.

--> Tell you what: Getting all jobs to 50 will give you a better understanding of the game, and why some players are moving/acting the way they do.

It will give you more power than just being a one class DPS that will bash on the few tanks and healers in the game, never putting on the heavy suit or the white gloves.

So since you are undecided, why not leveling them all?

This is an MMO: it's a time-sink investment, so if you play any, you have time for it.

Then I'm sure your Job will shine to you, even if by the time (about 3 months) NINJA will make it's way (Can't waittt!)

Good luck on your choices, but don't forget the most important thing of all: Have FUN!

Tanking at least seems to get me money on all those dungeon bonuses,

One thing i love about SMN is that between my pet and my chocobo, it's a 3 player party, which makes it the ideal job for solo content.
It takes all kinds of pressure off the battles, especially with the titan egi for tank.
If i'm lazy i can stand there and do nothing while they kill all the mobs in stuff like beastman dailies.

I got WHM up as a healer and never bother with SCH for the same reason ... they need to fix this.

Beyond that, i guess it's a matter of preference.
I find BLM to be the best job for learning tough fights because it's the simplest. Rinse/repeat button combo at distance with no other real obligations. Easy time for dodging. AoE is also necessary for speed runs.

I also have a MNK ... and that's certainly more involved because of the positioning requirements and the close range.

    This.

I mained as BRD for most of FFXIVs life from early access, enjoyed it. But static ended up with two BRDs so (even after getting BRD Animus) offered to switch to MNK, which never regretted. But due to the beauty of the armoury system I can switch to which ever job I'm in the mood to run with for a dungeon or three.

Being 100% stuck with one class/role gets me bored, why I usually create numerous alts. So FFXIV is perfect for me, as no matter job I decide to splat things on, or unsplat as healer I'm constantly playing and progressing my favourite chartoon © !

Also turns out I didn't dislike tanking, just should've been a WAR all along.
