Paladin requires Conjurer lvl15 and Gladiator lvl30. Paladin shares some cross class skills with Marauder so it's only gonna help you down the road. As far as crafting goes, I'd suggest Goldsmith. It's a great way to make money and it's very easy to lvl. If you're super serious about crafting you should level ALL crafting classes to at least lvl 15 for the cross class skills.

So am I able to switch to Gladiator or Conjurer at this point? And if so, how do I do this? In my starting area I didn't see any kind of a Gladiator guild hall.

Continue with the main storyline quests in Limsa Lominsa, and around lvl 15 or so you'll eventually unlock your own airship pass. This will allow you to access the Gladiator's guild in Ul'dah and the Conjurer's guild in Gridania.
