So I got a few of my friends to play the game, but when they go to play on the same server I am on (Diabolos) it tells them they are unable to choose that server. And they only have a choice of about 4 servers to choose from. Why is this?

It's because the servers can only have a certain number of players logged into them at any one time, so if they get too populated SE automatically restricts those servers to only allowing existing characters only. It's only a temporary restriction that change at a moment, meaning if you keep trying to choose a particular server, you will eventually succeed. (This should be an indication of just how successful the game is)
SE also posts regular updates on the current state of server restrictions on the Lodestone (every six hours), but as I said that can change rapidly depending on the time of day and how many people are playing, so that information may not be exactly accurate. But it's still a useful way of knowing the general state of the servers. The most recent server restriction post can be found here: http://na.finalfantasyxiv.com/lodest...06d0909189e479 (interestingly it says Diabolos is currently not restricted. So try it now and see if it works).
Also, the servers are arranged into 'data centre groups' - are you sure your friends are choosing the right data centre for Diabolos? (The data centre currently selected can be chosen on the main title screen under 'Data Center').
