Yes, the stats of Eos and Selene are influenced by those of the Scholar. To what extent I can't say, but you can observe the HP pool and heal power change with your gear and stats.
Honestly, from experience, the stat points you allocate don't have a make or break difference. You can mess those up, not be ideal and still be just fine in any class. You aren't maximizing what you can do, but that's not the name of the game. Can you get the clear, that's the question you need to ask. Scholars with all their points into INT can clear any dungeon just fine, just the same as summoners with all their points in mind can clear any content just fine. I say go for a split, you aren't gaining or losing enough from either and your gear more than makes up for the difference.
Unless you want to super number crunch and whine about missing 10-20 points of damage or healing (which does NOT make a big enough difference to break you) then go with your gut. Buy the reset item from your GC and test it out for yourself.

This. If you play both. Go full int, can easily heal every 8man stuff up until T5/Levi ex (no experience on healing T6+ cause I'm not sch main in our group)I did the same thing you did, started out as SMN, and slowly transitioned to SCH later. SMN definitely needs the boost more than SCH does, so I'd say keep your points in INT.
Even without the extra 30 Mind, I've healed T5/Levi EX with no issues on my SCH at i91. The main thing to being a successful SCH is to have your fairy on Obey, and use her abilities as if they were your own.
