One character can open up all classes.
Follow the main quest. Once you reach level 15 with the main quest you'll get an envoy quest to visit the other area's. After that you can get another job. There are no limitations. (You can switch from GLD to THM for example without any drawback).
My advice however is to get a job with cross-class skills which will augment your main job. That way you will be leveling another job; yet also improving your main while you are at it
To answer the second half of your question:
White Mage is the advanced job of Conjurer. It requires your Conjurer to be level 30 and Arcanist 15. If you then visit the CNJ trainer you will get a quest which will give you a Soulstone (you equip it like a normal equipment piece) which will then turn you into a White mage. It gives you access to more (advanced) skills, better base stats and a few other lil' perks. It does limit the amount of your cross-class skills however. So yes, you can open up multiple advanced jobs. Keep an eye on ACN however with stats distribution. ACN can turn into Summoner and Scholar: One being healer, one being DPS. ***They however share stat allocations***. So if you want to heal build up mind/vit, if you want to damage build up int/vit.

Actually, once you complete the level 10 quest at your first class's guild you can pick up some additional classes, those whose guildhalls you can reach. So a level 10 Arcanist could pick up Marauder, Blacksmith, Armorer, Culinarian, and Fisherman. But yes, it's the level 15 envoy quest in the main storyline that lets you reach the other areas to unlock their classes as well. You'll need to be able to get to Gridania in order to unlock Conjurer.
You can do all classes and all jobs on the same character. One of the perks of going the Arcanist route is that Arcanist experience points contribute to both Scholar and Summoner experience. So they level at the same time as each other. If you do both Scholar and Summoner job quests and make sure you have gear sets for both, you can jump the DPS queue in the Duty Finder by playing a healer (Scholar) in the leveling dungeons and get to level 50 sooner!
Just make sure that, if you want to play Summoner primarily, you put your points in Intelligence.
