Just pick the tank class you'd like to play most. Both are in demand in endgame content and do well enough.
You should be able to generate a sufficient amount of threat as either class with a decent approach to aggro generation. It's a skill that comes with practice, but you shouldn't really sweat it. And if you do, then the only thing you should be worrying about is the fact that you are not doing your job and how you can do it better.
Line of Sight Pulling is a skill rarely seen used by tanks, but can be very useful when there are a cluster of mobs that deal ranged damage and will not cluster up for your group to cleave them down and may be difficult to manage aggro on while they are so spread out.
A great opportunity to demonstrate the usefulness of this technique is at the locked door at the end of Haukke Manor. There are a few Will-O The Wisps in there and if you run into the room and aggro everything then run out and sit right outside the entrance to that room, all of the enemies will come into melee range for you since they cannot attack you through a wall.
Other than that, just keep an eye out for the amount of damage you are taking. If you are noticing a consistent increase in damage you should use a reactive defensive cooldown like Convalesence or Thrill of Battle (which can also be used proactively if you can tell you are about to take a hit that is going to exceed your current amount or current amount of maximum HP). If you know you are about to take a significantly large amount of damage you should use a proactive defensive cooldown like Rampart, Vengeance, Sentinel, Foresight, Inner Beast and etc.
Hallowed Ground is good for cheesing mechanics and giving your healers breathing room. Holmgang can be used to bind some enemies in place. Primarily used as an "I'm hitting this because I know I'm about to die" button, but if you are able to stun an enemy for a full 6 seconds and then get behind them before they turn around and use Holmgang, they will not be able to turn around and hit you for it's duration.
It's mostly common sense stuff... Just figure out where to use your cooldowns where they will make the biggest difference. Like if you're being hit by a bunch of enemies at once, that's probably your best chance to get the most out of Featherfoot, Holy Shield or Awareness.
Other than that just keep your HP high, enemies attacking you, and keep your accuracy up.
