Newly-made gear sets get that icon (it's the item level icon) whereas older gearsets use the old item level notation since gearset names aren't changed automatically. If you change the gearset and re-register it I believe it should overwrite the old name with the new one.
Something similar happened the update when they added the average item level as before it would say, for example, WHM Lv. 80 only taking your weapon into account and nothing else.

Judging by how the previous change went (when they went from showing the weapon level to average iLvl), it may be worth re-creating gear sets to get the new default naming convention. It treats (or at least treated after the last change) the older style of gear set names as though they were names you'd explicitly written. I.e. It stopped updating the set name to match your current gear level when you get better gear. It only does that with gear set names that match the current default naming convention.
The new setting also allows you to individually save the weapon/helm on and off.
So you can individually show or hide weapon/helmet for each job class.
