I like your "unfinished" comparison. I think what a lot of people tend to forget is that this game isn't even a year old, (despite it technically being out since 2010, 90% of the game was reworked) yet there are comparisons made to games that are several years old and they look to them at the breadth of content they feel should already be in this game.
I'm not going to pretend to be disillusioned about how the game actually works though. It's very transparent how it functions: it's accessible, but it's still designed to be a time sink. There's weekly lockouts for cutting edge content and random, low drop rates for repeatable content to keep you paying and playing. Obviously this works for some people while others have moved on.
I think people will be able to tolerate this a little better as they continue to introduce new systems into the game. For a certain subset of people, it's cap soldiery, beat Coil, done for the week. Others do the same thing but still find enjoyment in some of the other systems the game has to offer. The dev team just needs to continue to put in new systems in the game that people want to do. Daily Hunts sounds like it could have some promise, but unless it has good rewards then some people won't see a point to it. Others will do it just because it'd be something fun to do with their friends. (this is something that seems to be lacking in MMOs these days I think)
As the game matures there will be lots more to do. The Golden Saucer is planned and will have a few mini-games. Chocobo Raising is coming up. These things just take time.
