Levels are class specific, so whenever you unlock a new class, you'll be level 1 in that new class (with level 1 equipment restrictions). So it's a good idea to keep your starter and other low-level gear on hand until you've out-leveled it in all the classes you plan on picking up. (Though you could also just buy duplicates of low-level gear when you need them again if it's going to be a while.)
