This game's servers were not built in a way to handle super servers/ mega servers a la ESO. Assuming that you could even connect to the lobby alone, there would be massive queues. On top of that, there would be a great deal of disconnects as the servers try to handle the strain. Pretty much, it would be like the early days of 2.0 launch but far more exasperated.
Plus, try to imagine sitting in, say, Mor Dhona and listening to all the Ring of Thorns spam by Dragoons.

i like the idea of 1 huge giant server with everyone all together, course it's not really a viable option.
Don't call it a grave. It's the future you chose.
ESO also isn't cross platform...
In any case, this would require every zone to be instanced so you and a friend could both enter Mor Dhona but wind up in different instances of Mor Dhona. They would have to ensure that FATEs like Behemoth/Odin especially were synced or people would be trying to pop into whichever instance the monster was spawned in. The residential zones would have like 300 Wards. It would cause chaos with the Duty Finder since even if you retain multiple lobbies for pairing you still need the network resources and computing power to cleanly route people ONTO those lobbies.
I can only think of "Dogs and cats living together..." during the description from the ever famous movie, Ghost Busters.
In short, yeah, it would probably just...break.
Mega-server doesn't work this way. Just because there's 1 server that covers the entire region doesn't mean it will shove all players to 1 place. They shove the players into a lot of instances. For example in ESO, even though you and your friend is in same NA mega-server, you dont always end up in same instance, therefore you might not find him/her even though you standing in the same place, which you need to form a party with them to ensure same instance.
I don't know if it would work on FFXIV. But I think it "Mega Data-center" would work. I'm having trouble finding matches during non peak hours which could take hours

Dragonquest X had something kind of like a mega server. Basically your character was kept on a log-in server and each time you entered the world you could choose which server shard to enter. You could also freely change shards by visiting any inn while logged in. It gave the player control of which "instance" they were in, unlike ESO or modern WoW, and since friend lists and guild membership was account based, you could see a display of which shard your friends were currently in at any time.
I suppose the larger game population would make that impossible with FFXIV, but considering that DQX was working on the Nintendo Wii, you would think they could have tried it here. But again, SquareEnix is a huge company, I wouldn't be surprised if the FFXIV team and the Dragonquest X team never shared their ideas together.
I just wish that the "account based" trend of most mmos in the last 5 years had made it into this game, because it would make blacklisting RMT spammers so much easier.
