if your keeping stuff you may as well have 99, of each.
I personally have a crazy backlog if mats I collected whilst lvl'ing that I'm not using.
I always keep the base mats rather than crafting up the mat tree.. like as mentioned with logs into lumber. you could do that and save space but I would sell the lumber and keep the logs as converting the logs will use shards/crystals/clusters that you don't need to use right away. plus you may not end up using all those up-scaled mats for months maybe years.!! this applies to all base mats as far as I'm concerned including things that only turn into one thing.
with cul you should only keep the mats you need to make that one recipe your grinding on or make for profit everything else is vender trash.
other classes you can lvl at the same time recycling gear as you go but that takes longer so its best to raise the classes you really want to progress in first as that way its the most fun for you. use all leves on crafters, gather stuff to lvl gatherers until lvl 40 then go alittle bit into leves as well. create one of each recipe as well,,. except cul, unless you really want to. aim for max quality every time for the extra experience points gained. when grinding make things that stack as you dnt need 99 of any piece of gear, you wont be able to sell it quick enough.
fisher you buy to 50 with hq leve turn ins all the way from the get go to save yourself 100hrs or so. buy the fish of mb, if you cant get hq buy nq or use leves below your current level to get hq turn ins. if there's none available at all just wait and keep checking. or go fish, your call.
if you want all maxed as quickly as possible, expect to take at least 6-8 weeks to do this playing all day everyday, especially if your doing story stuff along the way
oh and one more thing sell your stuff cheap, near cost if need be as you wil be producing a lot of stuff you just wont need.
