If you have the time to invest on crafting then feel free to, you can always craft while waiting for friends or a party for your white mage and people mostly get crafting as a past time or for more money. Crafting doesnt affect the exp bonus of your combat class and the other way around but your highest combat class can affect another that is lower however.

Trying to level a crafting class at the same time as a combat class is a great big headache. There is so much to do, it winds up coming to a grinding halt. But do level crafting classes. Levequests are a good, quick, way to level a crafting class if you've been saving them up forever (like I do, pretty much solely so that I have leves available when I need company seals or the extra push to level X). Just don't expect to keep your crafting level up to scratch with your main class every step of the way. It's nigh on impossible unless you start committing more and more time to the crafter.
Make a habit of doing crafting leves and GC daily provisions. You'll level up surprisingly fast that way.
There isn't much waiting as a white mage for a party, que times for healers are very fast.
You can if you like, I personally wouldn't say there is any benefit to it since you can just go and level the heck out of whatever class you are playing at the time with little down time in between for craft leveling. Fastest way in my opinion to level a craft is choose two in the same city and use the leve that gives the most EXP that way when you end up having to port out of the city you will be in the same place for both and level two at a time. But that is for the crazies like me that like to power level stuff fast. As for end game perks with a craft, they are very minimal, people use it to get crafted gear and such for starting the raid/dungeon play but imo you can live without doing that. Personally I use crafting just for profit, and knowing what to make and what crafts is important on your decision of what to level.
I think its just easier to cap then go to crafting. This way you have a good amount of gil to work with. Don't forget to do leves as well!
