What we have now:

Steamed-Catfish which is an upgrade from Lava-Toad-Legs with Accuracy 4 & Critical Hit Rate 2.

Popoto-Pancakes, an upgrade from the Finger-Sandwich with Parry 4 & Accuracy 2.

Apkallu-Omelette (Accuracy 2, Critical Hit Rate 4) which are one of the most desired food don't get an upgrade?
Neither does Black-Truffle-Risotto (Critical Hit Rate 2, Determination 4)?
Pineapple-Juice? Pineapple-Ponzecake (Piety 4/2, Spell Speed 2/4)?

Is the Sachertorte (Determination 2, Spell Speed 4) and Roast-Canard (Determination 2, Skill Speed 4) supposed to replace all of them?

I noticed that too. Especially since I'm nearing 400 determination on my WHM, I was looking for something to replace the risotto. Alas, no dice.

From the looks of it, they excluded upgrades to the popular foods. My guess is they want people to make a trade-off between - I know these are all secondary stats but for the sake of clarity, going to call crit and det "primary" - primary stats and secondary stats like vit and whatever the small stat is.

I would love is someone could crunch the numbers on the new 3star food to figure out exactly what stat caps we need to maximize them. I've noticed many people buying Popotto Pancakes and I even sold 10 Roast Canard so far (15k each was quite surprised). I'm assuming most people are buying this food to simply test out in comparison with the 2star foods. I cant see anyone actually achieving ful benefits from them.

Heck even BG's MT Cortana swears by Popotto Pancakes even though i informed him that he's most likely not obtaining all the stats and that Finger Sandwiches are still more beneficial.

If anyone is good at Math here are the new stat caps for 2star food (lol Lyrinn lookin at you! ). I'm assuming its a simple calculation (im terrible in math).

There's no point in crunching the numbers for 3 star foods. The %s are exactly the same (4/4/2 for NQ, 5/5/2 for HQ) so 3 star becomes viable as soon as you hit the cap on 2 star.

I see. So for example as a Tank, once i reach the following stats. Its ok for me to move onto Pancakes?

Finger Sandwich (HQ) - Better than La Noscean Toast (HQ) starting from 460 Parry, 280 VIT, 450 ACC; Caps at 540 Parry, 380 VIT, 550 ACC

Obvioustly i wont be reaching that ACC cap until i'm in full Alagan and probably still wont. But for the Parry and VIT i can move to the 3star tier after i reach 540/380?

Exactly. For example, at 540 parry, you'll be getting 0.05*540 = 27 parry, which is the max on Finger Sandwich. Popoto Pancakes are also 5% so you'll still be getting 27 parry using them. The only reason you may not want to upgrade is due to cost and difficulty of HQing 3 stars, but stat-wise you'll want to switch immediately as soon as you hit any one of those caps.
