Pharos Sirius because of the atmosphere and the built-in dungeon mechanics.
Lost City of Amdapor because of the soundtrack and boss mechanics.
Stone Vigil because I just think that it's a fun dungeon.

I kinda like Copperbell? It's hilariously stupid easy on Normal (I never need to remove Cleric Stance any time I end up there as WHM), but at least it made an effort to have some 'different' boss fights; and there's a cruel side of me that enjoys watching people blindly flail at the second boss. Sastasha sorta tries too and I've seen overzealous tanks bite off more than they can chew in the wider open areas of it, and I actually look forward to a HM version of it.
EDIT: Remembering Copperbell's second boss suddenly makes the whole "what do you mean I have to NOT attack Levi EX wtf is that" thread a whole lot funnier.
Tamtara is boring as hell though and I'm hoping the HM makes it an actual dungeon with more than one boss and... any interesting details whatsoever, really.

1. both Haukke Manors: I loved the original entrance lore you learn before unlocking the dungeon. The story of it makes the dungeon have a great feel to it
2. both amdapors: again I love the lore that was given so far, and I feel there will be more unique dungeons relating to the Amdapor Civilization
other than those two, 3rd would maybe be Halatali HM. I like the gladiator type theme as you rise through the ranks to fight in the Colosseum
I will also put mine in no specific order, because I like them all.
Pharos Sirius (pre-nerf version): Great atmosphere. This is one of the only dungeons in the game where I truly felt like they did the setting complete justice. It absolutely feels like you are trudging up an over-run lighthouse and dealing with the baddies along the way. The boss mechanics are cool: subtle things like the Zu boss blasting in through the window to belly flop the party before you fight it, the floor with the tyrant with the background of mechanisms (which would pertain to the inner workings of the "light" on top of the lighthouse), the whole siren fight. I actually liked this dungeon much better pre-nerf. The difficulty of trying this dungeon the first time with no pointers was part of the initial appeal for me. I still like the dungeon, but it has lost some of it's luster by making the boss phases more forgiving.
Lost City of Amdapor: Such a beautiful dungeon. The music is among my favorite in the game. I loved the nostalgia I got from fighting a Mimic in there, and from fighting Diabolos. It made me reminisce of the first time I fought him in FFVIII, and the door mechanic is one of my favorite dungeon mechanics so far. The decaying Goobbue is an amazing boss model. This whole dungeon is very visually appeasing to me, and is a welcome departure from the various different models of 'stone walls' and 'dark caves'. It also helps that I played this game on PS3 for 6 months, and this was my first dungeon experience on PS4. The dungeon is beautiful regardless, but the jump in graphical prowess from changing consoles absolutely amplified the experience for me.
Dzemael Darkhold: A number of factors play into why I liked this one. The beginning of the dungeon gives you the feel that it's going to be a cakewalk (which it kind of is..), but as a first timer it did well to alleviate that feeling quickly. The crystal veil areas made me feel like a bow-god, because I could tank adds in them and not really suffer from much damage. The room before the floating eye boss was cool the first time; of course we wiped because we somehow pulled every mob in that roomThe 2nd boss was the first time I felt like I was frantically dodging to save my ass. The last boss of this dungeon was insane going in the first time. I think this might have been the first dungeon I did where everyone in the party had no idea what to do the first time. I think that made this dungeon more memorable for me, because we actually had to figure this thing out with no coaching.
Haukke Manor HM: Loved the haunted mansion creepy vibe and the DPS race on the last boss. Not to mention the laser show with Ash! =D
Temple of Qarn: This was the first dungeon that felt challenging with its interesting mechanics and multiple wipes from those bees and that first boss. Felt like there was actually something to discover in those ruins.
The Aurum Vale: I feel like I'm the only one that likes this dungeon. xD I'm a huge fan of debuffs and DoTs, so this fit like a glove. Plus Morbols are probably my favorite FF enemy. I also liked the tie-in with the cyclops FATE in Coerthas being the 'training' for the second boss.
Runner up—The Lost City of Amdapor: I love the atmosphere—and music—and figuring out the doors in Diabolos was fun, but I didn't get the same feeling of accomplishment like in the other dungeons—probably because we just avoid his ultimate attack. (Why are those doors even there? He should really get rid of them if he wants to win the fight...)

Brayflox's Longstop HM: It's a quick little dungeon with some fun fights and I have to say The first boss (Illuminati Commander) is my favorite. The Bomberman bombs make the fight fun and funny. I'm a little sad this has become THE place to Speed run and get seals, but when you're with a group that doesn't feel everything is a race, it's a lot of fun.
Lost City of Amdapor: I don't run it much due to how slow it is (I'm not complaining, it's a time issue on my end, making LC hard to fit in). but I like most people find the atmosphere and the Diablos fight is the best bit, neat mechanics that on first blush are confusing and a little frustrating, but once you understand it, it's a neat trick and pretty fun
And Believe it or not.... yes Copperbell Mines (NM) I love this dungeon because it is the first one that really asks you to use your head and introduces "Boss Mechanics" How many people here on their very first run through tried to DPS down the blob (no one can hurt "THE BLOB"!) and thought"OMG! KILL THE BOMBS" before figuring out you needed them to kill the blob. and while Satasha introduced Add mitigation, Copperbell teaches the Timed Add concept and actually forces the teaching of, you gotta kill the adds. which made for an early dungeon being actually kinda fun.
Halatali, Cutter's Cry, The Wanderer's Palace. Would like to see Sastasha make a return in the near future with lots more pirates.
Cutter's Cry: 'cause kitting the adds on the first boss as a healer is awesome. The Chimera battle is also cool.
Brayflox Longstop (HM): Again for the boss battles.
Battle on the Big Bridge: Not a dungeon but that fight is hilarious.
1. CT - terrific gameplay, awesome music. Never mind the trolls of course.
2. Halatali Hard - The last boss music. If you know what it is, you rock.
3. Tam-Tara - Sort of reminds me of 1.0 legacy days.
