We were talking in my FC and my guild leader and I came up with an interesting solution to the lack of variability in levelling a gathering class: multidiscipline fates.
There are fates that require the gathering of marked items currently I know, but this would be a little different. These FATES would allow Disciples of the Hand to participate as well, and perhaps even Disciples of the Land (but I'm not sure how those would work)

Some ideas include:

A fisherman (or group of fishermen, perhaps) accidentally pull a great beast from the sea. Oh, no! Someone has to stop it before it rampages!

Botanists are trying to gather fruit. Unfortunately, while trying to harvest the tasty treat, hungry vilekin converge on the area! The botanists must gather as much fruit as they can while the combatants try to hold them off.

A natural gas vein has burst open! Miners must work together to seal the vein, while combatants must protect the miners from bombs, who want to ignite the gas.
