So I have found myself loving the soundtrack and being wanting it. I was wondering if I upgrade to the CE version if I get the whole ~110 soundtrack or a random selection?

Welcome!
Firstly, only the physical Collector's Edition has the physical items like the soundtrack included - the digital 'upgrade' only gives you the in-game items. So you will have to purchase the full CE to get those physical items.
Secondly the soundtrack CD that comes with the CE is not the full OST - it's a small 6-track album called Sounds of Eorzea that only features the three daytime citystate themes and the background music for the surrounding zones.
A new near-complete soundtrack album on Bluray (Final Fantasy XIV A Realm Reborn Original Soundtrack) has recently been released which would be what you're after, but sadly that's also missing quite a few tracks, even though it's a 120-track monster, hence why it's on Bluray and not CD (particularly a lot of tracks from the old 1.0 version of FFXIV that have been reused in ARR, plus the new music with the 2.2 patch isn't included either). But it's the closest we have to a 'complete OST' at the moment.![]()
The 1.0 tracks missing from the new OST are available on the earlier Before Meteor ~ Final Fantasy XIV Original Soundtrack Bluray album though, which is probably why they were omitted.
