But why are there crafting classes? Also, if I change crafting classes how would I go about crafting?

There are 8 different crafting classes and they craft different things. For example, Weavers make most cloth clothing, Blacksmiths make most weapons, etc.

It's been a long time, but IIRC, when you join a crafting guild (after you hit level 10 on your initial class), you get trained in the basics of crafting.
