The only way to "connect" to the jobs the way you want to is to play a tabletop RPG. Check out some D&D or Pathfinder. An MMORPG simply can't handle that much complexity without some major balance problems (see FFXI already mentioned in this thread)
There's a few jobs I really like playing, but the ones I like most haven't been added yet. Only a matter of time until they add Thief and Samurai though, and one of the things I like most about XIV is how the game world feels like it's growing and changing as time goes on- much like how Revenant's Toll expands with each major patch.
I'm content with playing the jobs I do like, while watching the game world grow around me. I wonder how long it'll take before we've got access to Ishgard, or maybe an expansion to Garlemald...
I just wish SE would leak some concrete insight for additionnal jobs to keep people hooked and some "when".
The main scenario quests teased new jobs, and it's pretty obvious what those jobs are gonna be.
As for "when", Yoshi has always said they'd be introduced in the first expansion, which will be released late 2014/early 2015.

People quoting these articles as a "FFXIV should be FFXI" are getting irritating. The whole point of the article is about what will sell. You cannot compare the popularity of single-player turn-based RPG's to an MMO. The article doesn't even mention FFXIV or FFXI because of how irrelevant they are to the main series. There is nothing about FFXIV or its engine or server structure that would support FFXI. Firstly, there are way more players. Secondly, it runs a lot of its code server-side to be accessible to more players. Thirdly, the engine was completely revamped and is probably not conducive to coding like that any more. The game has already started adding more "open content", and I'm sure it will continue to do so as server stability improves.Good article on why FFXIV should of been more like FFXI instead.
