Choices? Lol. Only real choice you have is for your weapon, everything else is High Allagan and until you get that you need to use soldiery items. The only crafted items worth using pre 2.2 were accessories when pentamelded, there are no 3 star accessories though so the new i90 crafted is just placeholder armor for jobs you don't care about playing seriously or glamour items. SE hates crafters more and more each day, and the people who buy their wares.

No new crafted accessories is very depressing. They were the only gear really worth melding. Way to make materia even more worthless.

There are no new 3 star (i90) crafted accessories, making stat materia now completely worthless.

I think they are i110 and the parts comes from Coil 2. I'm not sure just guess from the patch note.

No, you can see the new recipes for each job listed in the patch notes. Those items you're describing are soldiery purchased and upgraded with a coil 2 drop, most likely oil and sand.
