It's a good idea to level all your DoH classes on one character because you can sub skills onto other classes.
Some skills I could not live or HQ without would be Careful Synth II (Weaver 50), Comfort Zone (Alch 50), Steady Hand II (Chef 37), Hasty Touch (Chef 15), Innovation (Gold 50), and Ingenuity (Blacksmith 15), and Byregot's Blessing (Carp 50) but mostly Careful Synth II and Byregot's
It won't punish you per se, but it'll make your life at level 50 harder when you want to start doing 2 star synthesis
So you pretty much need all crafting classes on one character to make all of the best gear/HQ items?
HQ items/best gear impossible/extremely difficult to get with out cross-class skills then?
Edit: All crafted items are freely tradeable, correct?

It's better since u can cross class from the other 7, just finished all 8 of mine and it's almost cheating hq'ing 1/2 star recipes
You can complete any recipe without cross-class skills but for HQ you need them. With certain crafts leveled you'll get 100% HQ chance for all recipes. With only one class you can't compete with that. Leveling other DoH classes also gets significantly easier as you can use the high level cross class skills from other crafts from the start.
Would also like to mention that the 2 star synths using the philo tome mats aren't worth crafting unless you can guarantee HQ them. Darklight far trumps NQ 2 star synths while HQ trumps Darklight
