A retainer's class can be changed at any time. However, you must reset their current class and level before assigning a new one.

Does this mean that if you get your retainer to 50 in botany, to switch to..arcanist, you have to wipe their level in botany? Basically, they are allowed to only have one class leveled at a time?

As I understand it, yep, one class at a time. So it will take a bit to figure out whether hunting, mining, botany, or fishing pulls in the best mats that may actually sell for something on the market. My guess is that this will drive the additional retainer subscriptions even more than having extra inventory space. (Though that too...)

If all the mats are ones we have available already... :-/

There's no difference in the items they'll receive. Nor is there a difference between DoW and DoM items.

What if your Retainer never come back?
What if your Retainer sold the stuff you wanted to make gil. And say they find nothing?
What if you send your Retainer to 1 too many dangerous ventures, they decided to hire Lalafell assassins to off you?
What if you are actually a Retainer hired by your Retainer to go adventure, and you didn't know it yet?
