Question from fishing newbie

Hello!

I just started fishing recently and don't quite get it yet. I found some guides showing all the possible fishing spots, and fished for ages on those places (well, middle la noscea and nowhere else yet, only lv 11).
But there are still some fish I cannot find, tried different baits and everything everywhere. Somewhere I read it's the weather, that some fish only show up during rain for example, but can't find any confirmation or guide for that.

Even in the first low-level fishing spots, thre's fish you can't catch before a certain lvl, cause you need a specific skill called mooch : means you need to catch a HQ fish and use it as bait with that skill. I think it's around lvl30, not sure though.
However, you'll need to come back to most of places when you hit lv50 to complete your fishing "bestiary".
And there's also some fish affected by weather/hour.
