I'm currently using a gpu 560 see and the latest Nivida driver but was wondering wondering if this is the "best" to use? What is everyone else using? Does the game play fine with no issues?

The most recent (335.23 on my 310m) is the best for now. 334.XX gave a fairly significant boost for some (5-10fps boost for some builds), 335 keeps that and had some performance boosts for other games, possibly XIV (I mainly play on PS3 so I can't really say, my laptop runs the game like crap).
I'm using the latest nvidia drivers with no issues.

The reason I asked was because last night while playing, the graphics turned a dark colour and the game froze. Never had this before. Using the latest Nivida driver and a new install of Windows 7 64 bit.
I always use the latest driver.
Then again I'm not a reference, as my Intel Core i7 3770k OCed@4.5ghz and ASUS GeForce GTX 780 are overkill for this game at 1080p in the first place. >.>
You're using a 560 or a 569Ti? Nvidia has had some trouble with driver stability with the Ti variant with drivers past 314.22
