The first time I run new content I always do it as bard. The mobility and range make everything easier. Even if you don't know the fight you can just run around and pew pew.

Not to mention that the majority of video guides show at best one facet of a fight, usually from a very poor camera angle and with no explanation of what is going on or why. Or sometimes will have just plain outdated tactics.
Going back on topic, though. To learn a fight I don't usually worry about my role so much as the people I'm there with. I'm not going to join a run of strangers expecting an easy win if I'm still not comfortable with the fight. I much prefer to go in with a group of friends who understand that I don't have much experience with the encounter or with a pf group that is there specifically to learn. Even if we don't win it usually gives me a chance to see the fight first hand, familiarize myself with the patterns and understand a bit more behind what every move does and how best to deal with them.
I run new stuff with summoner, since it's my main and the best geared out of all of my jobs.
All dungeons in the game are faceroll, so I'm going to ignore those. For Titan HM and extremes, I watched a video. For practicing, I did duty finder. Once I felt I had the mechanics down, I joined PF / static / kill groups. For coil T5, I just pugged it on my own learning the fight in progression groups (since there were/are so many).
