I don't read that as being against a DPS hold mechanic but I understand if you do and want to focus on that instead of discussing how they could of made Ifrit more interesting as an encounter.
I can assure you there are LOTS of people who believe that being on top of the DPS chart makes them better players or something.
Of course, a mechanic that makes this "race" problematic is shunned upon - which is, frankly, ridiculous. It's the mentality of "bigger numbers = better numbers", which is fundamentally wrong in all the encounters we have mentioned.
Funny thing is, there are Tank holds (think about tank swapping: you are, actually, NOT tanking thus you are holding your tanking ability) and Healing holds (overaggro/overheal anyone?). You rarely see tanks or healers whine about this, and when healers do, the answer is just "learn to manage your healing".
Well, learn to manage your DPS. That's all there is to it.
Now, if you want to discuss about whether Ifrit is "interesting" or not - I think that a mindless burn would be even less interesting than learning how to stop your dps (which, I repeat, is what DPS would like to avoid so I hardly believe that we can find a solution that will not enrage someone), but I guess that is a matter of tastes.

Sorry my teams have never used Limit 3 there. It's funny that in all this months i have done Ifrit countless times and i never had that issue. Just have people not doing dumb stuff like dotting Ifrit or limit breaking him and have them do what they really have to be doing in that phase. Breaking the nails.
I really hate this with regards to Titan EX, if you are breaking the heart during his 5 way landslide he sometimes cancels the landslide and sometimes doesn't

For people who don't know what that was like: when Garuda (hard) was first introduced in 1.0, you could bring in a group of BLM, a tank, and a healer. The BLM would alternate between pushing hard and holding back at certain points of HP, effectively lengthening the fight (because of the way her mechanics triggered). If you did it right, you could kill her BEFORE she even went into the next phase.
Exactly. I went smn not knowing about it. Gave ifrit fresh DoTs and left Garuda atking him while i did my thing on the nails. All of a sudden Ifrit hellfires and we like "wtf? we were doing so good?" One of our healers tells us about the early enrage. Next go round I dont give him fresh Dots, i still leave garuda on him until im done baneing the double nails, and we were just fine.
