For melee DPS, Monk is probably your best bet.

No problem at all mate, as for servers there really is no best or worst (other people will disagree) but its all based on what kind of people you party with. Just make sure you watch out for NA and EU servers at the end of the server name.

As for classes the dps classes all function well in their respects. the breakdown goes:

Dragoon - AOE heavy melee (skills require some minimal movement to achieve best dps, cant really say more as i dont have it leveled to 50 yet.)
Monk - Single Target Master (VERY difficult to master rotation and requires CONSTANT movement. Staying in FLANK only mode is a pure waste of potential and gives master monks a bad name :P)
Bard - Single target/AOE/Support (this class doesnt have constant dps like the others but has good burst/dot/aoe abilities. It also is a class that is needed in endgame for its MP/TP regen songs. No cast times on skills so you can fire while moving and dodging. a really easy class to pick up and play and not that difficult to master, IMO)
those 3 are melee/ranged which, i assume, you are referring to.
But if you want to stick with magic:
    Black Mage - AOE heavy
Summoner - Single target DOT king.

I'd suggest Coeurl of course. Some really friendly folks here, usually lots of activity with other players, and some really new-player friendly free companies (player organizations)

Also, know that you don't have to roll a new character to play a new class. When you get your current class to Level 15 in the story, you'll get the chance to visit the other starting cities and you simply have to visit the other class guilds and take on their initial quest in order to unlock the additional class. Then you can switch to that class (by changing your equipped weapon) and level it up instead.

The guilds for both Archer/Bard and Lancer/Dragoon are located in Gridania, and the guild for Pugilist/Monk is located in Ul'dah.

When you unlock a new class, do you unlock it at level 1 or level 15?

Every class starts at level 1.

    Level 1.

The only difference with this is Jobs. When you unlock the Job for a specific class, that Job will be unlocked at Level 30 (as its simply an addition to the main class accessed by equipping an item known as a Soul Stone.) So for example the Job for Paladin has you level Gladiator to Level 30 and Conjurer (your secondary job class) to Level 15. When you complete the Job quest for Paladin and equip the Paladin Soul Stone, your Gladiator will switch to Paladin, and will still be at Level 30. As you level your Job, you're also leveling the main class of the job.

You are actually already playing the class that best fits the ''all-out damage'' you mention. If you like huge damage numbers on single targets and awesome AoE spells, then stick with it. Plus having infinite MP is always fun.

Otherwise, if you prefer melee damage, then both Dragoon and Monk are good choices. Monk is more position dependent but can inflict a bit more damage than Dragoon in optimal situations (i.e. fights where the boss stands still).

You can always try out more than one class once you've played the main story to level 10 and get the ability to change classes.

Once you complete the level 10 class quest for your starting class, that unlocks the ability to add other classes. To add another class, go to that class's guild and take the "So you want to be a <class name>" quest from the guild's receptionist. It's a quick quest that just has you go talk to the guildmaster and he/she gives you a starting weapon or tool for the class.

Once you've unlocked a class, switching to that class is just a matter of equipping the type of main hand weapon or tool used by that class, so anytime you're holding a thaumaturge wand in your main hand you're a thaumaturge, anytime you're holding a sword you're a gladiator, anytime you're holding a bow you're an archer, etc. (You'll probably want to set up gear sets for each class. That lets you switch all your gear at once to a set appropriate to the type and level of that class.)

There are no limitations on how many classes/jobs you can unlock and advance. You can do all 19 classes and all 9 jobs all the way to level 50 if you want. But each class starts at level 1 and has to be advanced separately from all the other classes. Jobs are different in that they don't actually have a level of their own, but use the level of their base class.
