in the character configuration, tick on Face target when action is something, this will always make your character face the enemy that you target before casting, which will not make you get interrrupted.

To add on to this, this doesn't solve the issue of mobs moving while casting, so you sometimes have to mash the keybind to face a target. (F by default on keyboard) At least this is the case with the Legacy camera scheme.
