While translation is a large part of our job, what is not known by many is that the EN localization team plays a large role in the creation of a lot of in-game terminology and lore which is then localized back into Japanese (with liberties often taken by the Japanese team so that the text might appear more appealing to their target Japanese audience).
I don't think there is any at this stage - I know the FF Wiki and Gamerescape had quest script pages for 1.0, but they've since disappeared. When I've quoted dialogue it's usually because I've been quoting from screenshots I've taken.
If you go to xivdb.com and search for a quest (or manually look for it through the master list) each quest will have a "Dialogue" tab you can go through to see the actual quest text.

Orophin beat me to it. xivdb.com is my place to go it lays out the scripts in order. It requires knowing quest names to follow it correctly, or at least having a ordu list. I use it to find data on leves (a great source of lore info).

It's strange to me, really, because in 1.0 there were all sorts of extraction programs for DATs - something that made it very easy for transcripts to find their way around these fair intertubes. However, despite ARR having a larger user base and a lot more of a following, development of programs like these has somehow waned. XIVDB is the closest thing I see to what you're looking for (and it is neither complete nor term-searchable). It's been frustrating me for a while watching all the old resources for lore library-building dry up. I need to make friends with people who do it manually for their database sites, lol.

I can only assume that is because SE are being far more stringent on DAT-mining now than they were previously, threatening the lawsuit-stick against anyone attempting to tinker with the game. If that's the case, I wonder where the line is. What makes XIVMODELS different from Model Viewer? Or XIVDB different from "Export-to-CSV?" If SE wouldn't allow the DB to be extracted via a GUI Button, why allow it to be done manually and converted into a public resource? And I say this as a fan of these sites.

Thank you all!! I'm trying to compile a list of lore for my FC (though, mostly for myself as I'm sure many of them don't care :x) and was wondering about some of the job- and main story quest info.

Yeah, it's pretty odd.
