Took a while but I finally got lucky yesterday. Caught it around 10:30AM sunny weather using rat tails (with the double mooch of course)
Some people said rat tails have better luck, so I tried them. Could just be a coincidence but using the minnow only got me silver sharks.
Regarding Navigator's brand - I was fishing it after I had gotten my forager's rod so I was at 332 gathering but i STILL had one get away. Eventually after 2 days of going at it I got it. It was definitely a lot less painful than the titanic saw.

Finally caught this guy after about a week of trying. Late morning (10-11) using rat tails.
I was so excited I didn't get a screenshot but that's what the log and puush are for. xD

I finally caught mine after melding a lot of materia. Ended up with 292 gathering and 263 perception before food then caught it on the 5th cast after weeks and weeks of no success.

I got mine within an hour. 11:30 am, sunny weather, Goby Ball (bit cannibalistic).

Caught mine a few days ago after 2 serious attempts at it.
Clear day, around 11-11.30am. My gear is nothing special, HQ AF and the 50 rod the class quest gives. Didn't use any food at all.

There's a screencap floating around of someone having got mastercraft demimateria from desynthing these fellers. Please let it be fake lol.
selling the fish is still more profitable then desynthing it, even if you would get a mc demi every 3rd try
fish sells for 300k here and mc demi for 700k
