Actually, after 2.1, about 2 weeks into it, the new theorycraft for blm has been showing to switch to spell speed, but the difference is minimal as of right now. The main advantage is Titan, where you need to move around a lot, getting that cast of a half second faster makes a difference, more casts more damage more dps.
If your looking for theorycrafting posts about blm, you have to now look for anything in 2014, there are a lot of theorycrafting posts, pre-beta, beta, and september that show crit (crit was also pre-beta and beta thought to be the main stat because of thunder, but when that was changed that you can't stack the thunders, crit was switched in priority with det)
Theorycrafting is going to change every single patch, for same reason, pre 2.1 white mages did not want spell speed at all, post 2.1 now spell speed is more useful then crit. It was originally thought that there wasn't going to be enough spell speed to make it useful stat until gear level go up farther, it is now being shown that is not the case, but it's not the priority stat like WoW has it.
Also spell speed for summoner pre 2.1 was an important stat, because you could get an extra tick from your dots, post 2.2 you don't get that anymore, BUT parsers pre 2.1 were not accurate for dots, so nobody really knew. I only realized it beause one night I was bored and counting how many ticks my Miasma was getting off, 7, but when I changed gear the lower my spell speed, I was only counting 6.

Mm, I am inclined to say scholars benefit more from crit and determination than spellspeed, although I do see an argument to build spellspeed as secondary since the pet buff increases your sspd by 20% if it crits. It still requires you to have the necessary crit gear for your summon though. Similarly, SMN benefit more from crit than spellspeed. I am not as familiar with the benefit to BLM, though it seems Mhaeric covered it quite extensively.
As for WHM and crit, while you do get bigger heals with crit gear, it becomes much more difficult to manage enmity with crit gear than spellspeed and determination. Most WHM already have a tendency to pull off tanks, and full crit gear will almost guarantee enough overheals to warrant a premature shroud of saints for most players. If you have ways to manage the extra enmity (largely how comfortable you are with the boss skill rotation and boomeranging tank hp) it's fine, but most find it too troublesome and focus on slightly more powerful and faster heals than the random multiplier of crit.
