For gear, you will want a r47+ haubergeon, decorated iron scutum, and strength rings for fights where you aren't booning much (goblin, dodore (if you have emulate))... and you will want iron cuirass, vintage kite shield, two mythril wristlets, and one vitality ring for when you are shield boon rotating (greater buffalo, mosshorn (supertanking), uraeus).

The logic behind this is that strength is useless when you are using deflection and aegis boon, and it hardly matters when you are using sentinel to cover the gap in those two. The only thing that matters is the wield rate. The gear you are switching to isn't so much for VIT but for the DEF, cuts, and HP to mitigate and lessen enmity bleedout. Strength is more important when you are using the regular guard, say against the goblin, giving you more stamina to heavy stab with, using the strength even more.

HP becomes more important against dodore if you do not have emulate, especially if you are tanking him and all the adds. It's not needed on the goblin, he's really easy with or without emulate.

The templar's chain set is bad too. Unless they let allagan sets use two or three materia with no risk (and given that materia isn't awful stat-wise) it will never have a use.
