Not going to lie, IMO Ultima HM is EXTREMELY easy and forgiving. I was surprised how undertuned it was when I first entered it. It's not a good introduction to other content. As for where to go from now, I suggest getting a good party finder group together to farm Garuda extreme mode if your main class' BiS ring drops from there, and at the same time try to get coil 1-4 down on a weekly basis(maybe try to find yourself a static once you're savvy with the mechanics). I think the only part you'll see a jump in difficulty is T5 and Titan extreme once you feel comfortable entering them. Well, that is until coil 6-9 comes out and they get the echo buff/better gear becomes available.
If you do it in ilevel 65-70 average gear then the fight is a decent challenge but nothing too tough.
But if you did it with mostly 70-90 gear the fight is no challenge at all, it is almost completely trivial.
You can't compare it to other endgame because Ultima HM is designed to be doable with terrible gear, so having decent gear makes it extremely easy. Since it's a lot harder to overgear coil and extreme modes unless all your gear is 80+ with mostly 90, they are still challenging with decent gear.

Are they interchangeable according to boss, or does one become better than the other at some point?
coil has an accuracy cap, your goal is to stay above that or very close to that cap so as few attacks miss as possible.
for tanks pre turn 5 its 472. in addition, you want to maximize parry, your other main secondary stat.
allagan jewlery is all BiS, along with belt, and shield. helmet drops on turn 5, along with weapon. everything else is myth.
As long as you can get to the content you should be able to do the content... If you do it and fail then you know you need to gear up a little more... You sound way over geared but then again it all goes with your play style and how good you are at dodging...
Of all the fights in the game, Ultima HM is my favorite.
It's got so many differences in kind. Each phase has something different going on. It's really interesting, fun and satisfying to play!
I just wish there were more reasons to do it.
Remember that players progressed into Coil with iLv. 70 equpiment. I've been all the way to Turn 5 in Darklight as a tank as I wasn't sure what job to specialise into.

Personally, I think Ultima HM is as easy as Garuda HM. It's easy to get the hang of and you'd probably only need to be a bit over i70 to do it.
In my opinion Ultima is about the same difficulty as Titan HM in terms of dodging mechanics, but given a decent WHM/SCH it is far more recoverable, so in that sense, it is actually much easier as a group, even if not as an individual.
Titan you lose someone to landslide, they are out for good. Further due to the timing of stomps, you are very limited in ability to raise those who go down to WOTL, and you have to rely on having a SMN/SCH do it.
I have had to raise more than 3 times as WHM over the course of an Ultima, and use LB3, and still finished in time, without running out of MP when it mattered. On titan, more than 2 raises and it is all over because I will run out of MP and not recover enough in time.
If you find Ultima easy enough, you should be fine on GEX though.
